How it is computed

Area is π × r² for round pans and length × width for the others; volume is area × depth, filled to the brim with straight sides, so real capacity is a little lower. The swap column finds the pan, or pair of pans, whose area is closest, so batter depth and baking time stay similar.

FAQ

Can I bake a 9 × 13 recipe in two round pans?+

Yes: two 9-inch rounds give about the same surface. Start checking for doneness a few minutes early.

Should I match area or volume?+

Match area to keep the same batter depth and baking time; match volume when the pan will be filled to a set level, as for loaves.
