Formula breakdown

Formula

oven time = weight (kg) × stated rate (min/kg); total = oven time + resting

= 132

Note

Simplified model: results are standard culinary ratios and stated per-kilogram rates. Real ovens, flours, ingredients and food-safety requirements vary, so use a thermometer and your own judgement.

Frequently asked questions

Why is cooking time based on weight rather than just oven temperature?+

Heat needs time to penetrate to the center of the roast, and that time scales with the roast's mass and thickness more than with any other single factor, so weight (as a proxy for size) is the standard basis for time-per-pound guidelines at a given oven temperature.

Why do two roasts of the same weight sometimes need different times?+

Shape matters as much as weight: a long, narrow roast has more surface area relative to its center mass and cooks faster than a compact, round roast of the same weight, since heat penetrates from the surface inward.

Is time-per-pound accurate enough, or do I still need a thermometer?+

Time-per-pound is a planning estimate, not a guarantee; oven calibration, starting temperature (refrigerated vs. room temperature), and roast shape all cause real variation, so a meat thermometer checking internal temperature is the only reliable way to confirm doneness.

Does resting time count as part of the cooking time?+

No, resting happens after the roast comes out of the oven and is separate from active cooking time, but it's essential: resting lets juices redistribute and the internal temperature typically continues rising a few degrees, so factor rest time into your total meal timeline.

Why does starting temperature (cold from the fridge vs. room temperature) matter?+

A roast starting colder takes measurably longer to reach the same internal temperature than one that's been out long enough to lose its chill, so bringing meat closer to room temperature before roasting makes the calculated time more accurate.
